做法
1. | 豬肉用基本醃料(濃)和1大匙老抽醃15分鐘。 |
2. | 依照炒飯基本料準備好材料。我這次使用糙米飯。 |
3. | 將豬肉與2大匙油和蒜末拌勻。不沾鍋燒熱後加入肉絲炒散並到8分熟。盛出備用。 |
4. | 3大匙油在炒鍋裡燒熱後加入蛋炒碎。倒入米飯繼續炒到蛋呈金黃色而飯米粒都鬆散開來,然後加入鹽,胡椒和醬油調味。 |
5. | 最後再拌入肉絲和蔥花拌炒到所有材料都熱透即可。 |
PROCEDURE
1. | Marinate the shredded pork with the Basic Marinade (Dark) and 1 tbs. of dark soy sauce for 15 minutes. |
2. | Follow the instruction of "Fried Rice Basics" to prepare the ingredients. I use brown rice this time. |
3. | Mix the pork with 2 tbs. of oil and minced garlic then add the pork to a heated non-stick pan. Sauté the pork strips until they are loose and 80% done. Set the pork aside. |
4. | Heat 3 tbs. of oil in the pan until very hot then add the beaten egg and scramble. Place in the rice and stir until the egg is golden brown and the rice is loose without any clumps. Mix in the salt, pepper and soy sauce for seasoning. |
5. | At last add the pork and scallion. Stir until all the ingredients are cooked through. |
